After I got home from work, mom asked me if there's anything i wanna eat for dinner? Since it's quite hot these days, I answered: "I wanna eat Japanese Cold Noodle (soba)!" and decided to make it myself.



Japanese Cold Noodle is extremely easy to prepare. As long as you don't mind having already made noodle instead of freshly hand made, you'll be fine. When I was studying in Canada, I often made this dish during summer, because it's as simple as instant noodles :P



I called it: Lazy-Bum-Jap.Style-Cold Noodle







Ingredients: Noodles, Soba Sauce, Wasabi, and some other ingredients you like. You can purchase all these materials from Jason's Market or Breeze Super.



Today I prepare two type of noodles: Thin Udon noodle (sesame flavor) and plum flavor pink noodle. You can add some japanese dried fish slices, shredded dried seaweed, and white sesame in the sauce to accent the flavor. For a lazy bum like me, you can use Mishima's furikake (the mixed ingredient), cuz it has everything you need =)







Even though soba sauce looks light in color, it's very very salty! You might want to taste it and add a few drop of water to dilute it before adding other ingredients into the sauce.







Thin udon noodle (Black sesame flavor)







Plum flavor noodle. I had this type of noodle at some buffet place once, and it taste soooo good, unforgettable! The noodle i bought is imported from Japan, but does not have strong plum flavor. If anyone knows which brand of plum noodle has stronger plum flavor, please let me know!

The udon is wrapped by one person portion while plum noodle isn't. You have to estimate your own appetite.







When the water is boiled, we are ready to cook the noodle! If you want to make different flavor of noodles, you better cook them separately. Cook in High for about 4 minutes, and switch to Low and cook for 7 minutes, the noodle will be thoroughly cooked. Please refer to the instruction on your noodle's packaging.







Once the noodle is cooked, cool it down immediately with cold water or iced water







Leave it to dry and the noodle is ready to eat!

If time is not permitted, or you are having a busy schedule, I would suggest you to freeze the noodle for 3 minutes, and it will be ice cold! From the beginning until ready to eat, will not take longer than 15 minutes!







The soba sauce diluted with water, add wasabi and the ingredients you like. This one has Mishima Furikake, so there's white sesame, dried seaweed, black sesame, and some dashi.



For a change, I would add some Japanese white sesame sauce!







This one was brought back from Japan. I found some other brands at Breeze Super, and they all taste quite similar. Just pick the ones you like. Price ranges from NT$100-$400.







Add some white sesame sauce to the soba sauce, tastes much much better!

Obviously, the cooler the better!







Udon is very chewy. Black sesame flavor is light, not so obvious.







Cannot taste the plum flavor. Only at the last few bites, I am able to taste the plum flavor, just a little bit.





Cold noodle is easy and very refreshing in summer! Please give it a try when you have time =)
